- 8 ounces (226.8 g) bacon, cooked, coarsely chopped, drippings reserved
- 12 ounces (340.2 g) cremini mushrooms, stems removed and sliced
- 1 cup (30 g) baby spinach, coarsely chopped
- 8 ounces (226.8 g) mozzarella cheese, shredded
- 8 ounces (226.8 g) grated Parmesan cheese
- 4 ounces (113.4 g) Gruyere cheese, shredded
- 1 small loaf of bread, about 10 ounces, slightly staled, cut into ¾-inch cubes
- 6 eggs
- Salt and pepper, to taste
- 4 ounces (113.4 g) sharp cheddar cheese, shredded
- Fresh chives, chopped, to garnish
Instructions
- Preheat oven to 425 degrees F (220 degrees C).
- Heat 2 tablespoons of the reserved bacon drippings in a 10-inch skillet over medium heat. Add the sliced mushrooms, season with fresh black pepper, and cook until all of the moisture has been released and has evaporated. Remove the mushrooms from the pan and return to the heat.
- Add the spinach to the pan and toss, cooking just until it is slightly wilted but still bright green. Remove from the pan and turn off the heat.
- In a large bowl, whisk together the eggs until completely blended, seasoning them with salt and fresh black pepper. Add the cooked bacon, sautéed mushrooms, wilted spinach, mozzarella, Parmesan, Gruyere cheeses, and cubed bread into the bowl with the eggs. Fold everything together with a spatula until evenly distributed and all of the bread has been moistened.
- Turn the mixture into a 1½-quart baking dish, pressing down gently if necessary (the mixture will sit about 1-inch above the top of the dish). Sprinkle the top with the sharp cheddar cheese and bake for 15 to 20 minutes, or until the strata is set and the top is golden brown and bubbling. Sprinkle chopped chives on top and serve immediately. Leftovers can be stored in the refrigerator for up to 3 days.
