Ingredients

For the Cake:

  • 16 ounce (453.59 g) box pound cake mix
  • 4 egg whites
  • ⅔ cup (166.67 ml) water

For the Filling:

  • 2 teaspoons hot water
  • ¼ teaspoon (0.25 teaspoon) salt
  • 7 ounce (198.45 g) jar marshmallow creme (about 2 cups)
  • ½ cup (102.5 g) vegetable shortening
  • ⅓ cup (40 g) powdered sugar
  • ½ teaspoon (0.5 teaspoon) vanilla extract

Instructions

  1. Make the Cakes: Preheat oven to 325 degrees F (160°C).
  2. Prepare Molds: If you have a Cream Canoe Pan, spray it thoroughly with non-stick cooking spray. If you do not, you can easily make your own molds: Tear off a large square of aluminum foil (approximately 12-inches square). Fold it in half once, then fold it in half again, creating a smaller, thicker square. Wrap this foil piece around a spice bottle or any cylindrical object of similar size, pressing the foil firmly to form the shape. Close the ends, leaving the top open. Carefully remove the bottle and place the foil form on a baking sheet or in a large baking pan. Repeat this process with 9 more pieces of foil to make 10 total molds. Spray the inside of these homemade molds with non-stick cooking spray and set them aside.
  3. In a medium bowl, beat the egg whites on medium-high speed until stiff peaks form. Set aside.
  4. In a large bowl, combine the pound cake mix and water. Beat on low speed for 30 seconds, then increase to medium speed and beat for an additional 2 minutes, ensuring the mixture is thoroughly blended and smooth.
  5. Using a rubber spatula, gently fold in about one-third of the beaten egg whites into the cake batter. This step helps to lighten the batter. Then, carefully fold in the remaining egg whites until they are completely combined and no streaks remain. Be careful not to deflate the egg whites.
  6. Divide the prepared batter evenly among your 10 molds.
  7. Bake for 30 minutes, or until the cakes are golden brown on top and a toothpick inserted into the center comes out clean. Carefully remove the cakes from the oven. Using oven mitts and exercising caution to avoid burns, gently turn the cakes out of the foil molds and place them right-side-up on a wire cooling rack. Allow them to cool completely before proceeding to fill them.
  8. Make the Filling: In a small bowl, stir together the hot water and salt until the salt has completely dissolved. Set this solution aside.
  9. In a large bowl, combine the marshmallow creme, vegetable shortening, powdered sugar, and vanilla extract. Beat on high speed until the mixture is light and fluffy, periodically scraping the sides of the bowl as needed to ensure everything is well incorporated.
