Irresistible Peach Crumb Bars: Your New Favorite Summer Dessert
There’s something undeniably magical about biting into a perfectly ripe, juicy peach. For me, this enchantment began quite unexpectedly during a memorable family vacation. Our road trip to sunny Florida led us across the state line into Georgia, affectionately known as the “Peach State.” As the mileage markers flew by, my husband, with a twinkle in his eye, suggested we pull over for a slice of authentic Georgia peach pie. The mere mention of it ignited a fervent craving within me, a sweet obsession that would soon dictate my baking endeavors.
My mind became fixated on that elusive peach pie. Despite the lengthy 16-hour drive making a spontaneous pie stop impractical, the desire lingered. A couple of days later, the persistent chatter about the perfect peach pie finally led to action. We acquired a basket of the freshest peaches and set about baking a homemade pie. The result was nothing short of divine – easily the best peach pie I had ever tasted, hitting every sweet, fruity note imaginable. This singular experience kicked off what I affectionately call my “peach spree,” a delicious journey into the world of peach-infused delights.

Returning home from our vacation, my newfound peach enthusiasm was still at an all-time high. On a trip to Sam’s Club the very next day, I stumbled upon a truly rare sight: an entire case of impeccably perfect peaches. Every single one, without exception, was unblemished, firm, and bursting with promise. As any avid baker knows, finding such a pristine batch of fruit is a stroke of pure luck, a moment to be seized. Naturally, I couldn’t resist snatching them up, knowing full well I now had more peaches than could possibly be consumed before their peak freshness faded.
The delicious challenge was set: transform these glorious peaches into something truly fabulous. The vision that emerged was a dessert that combined the comforting familiarity of a classic peach pie with the delightful crumbly texture of a coffee cake. Thus, the idea for these spectacular peach crumb bars was born. They promise all the sweet, juicy goodness of a pie, nestled within a tender, buttery crust, and crowned with an irresistible streusel topping.

The Perfect Fusion: Peach Pie Meets Crumb Cake
These peach crumb bars are a testament to the idea that some of the best desserts are born from combining beloved elements. They ingeniously marry the best characteristics of a traditional peach pie – that luscious, fruit-forward filling – with the textural marvel of a crumb cake’s rich, buttery streusel. Since our homemade peach pie had set such a high bar, it was a no-brainer to adapt its exquisite filling recipe for these bars, ensuring every bite carries that same irresistible flavor profile.
When preparing the peaches for the filling, I opted for dicing them into smaller, uniform pieces. This choice makes the bars incredibly easy to eat, creating a more manageable and less messy experience, especially for snacking or serving a crowd. The diced peaches distribute evenly throughout the filling, guaranteeing a burst of juicy flavor in every square. However, if you have a penchant for the more classic, elegant look of peach slices, feel free to use them instead. The beauty of this recipe lies in its flexibility. Whichever way you prepare your peaches, these crumb bars are an absolute must-add to your baking repertoire. Prepare to savor every sweet, spiced mouthful!

Tips for Baking the Best Peach Crumb Bars
Achieving bakery-quality peach crumb bars at home is simpler than you might think with a few key tips. Firstly, always use ripe, but firm, peaches. Overly soft peaches can result in a mushy filling, while under-ripe ones lack the essential sweetness. A good peach should yield slightly to gentle pressure and smell fragrant. Peeling the peaches is recommended for a smoother texture, but if you prefer a rustic feel, leaving the skins on is an option for certain varieties.
When making the crumbly dough, resist the urge to overmix. Overworking the dough can lead to tough bars. The goal is a crumbly texture that comes together when pressed. Keeping the butter cold is crucial for achieving that signature crumbly topping and tender crust. If your kitchen is warm, you can even chill your flour and other dry ingredients before mixing.
For serving, these peach crumb bars are absolutely delightful on their own, perhaps with a dusting of powdered sugar. But for an extra touch of indulgence, consider a dollop of fresh whipped cream or a scoop of vanilla bean ice cream. The warm spices in the filling, like cinnamon and nutmeg, perfectly complement the sweetness of the peaches, creating a truly comforting dessert experience. They are ideal for summer gatherings, potlucks, or simply as a special treat with your afternoon coffee or tea.
Storage and Freezing Suggestions for Peach Crumb Bars
One of the many advantages of these delectable crumb bars is how well they store. Once fully cooled, transfer them to an airtight container. They will remain wonderfully fresh at room temperature for up to 4 days, making them perfect for preparing ahead or enjoying throughout the week. If you need to keep them longer, these peach crumb bars freeze beautifully. Wrap individual bars tightly in plastic wrap, then place them in a freezer-safe bag or container. They can be frozen for up to 2 months. When you’re ready to enjoy, simply thaw them at room temperature or gently warm them in the oven for a “freshly baked” taste.

Ingredients
For the Dough
- 3 cups (426 g) all-purpose flour
- 1 cup (198 g) granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon (0.25 teaspoon) salt
- 1 cup (227 g) unsalted butter, cold and cut into cubes
- 1 egg, lightly beaten
For the Filling
- 5 cups (770 g) diced or sliced peaches, about 7 peaches, peeled
- 2 tablespoons lemon juice
- ½ cup (71 g) all-purpose flour
- 1 cup (198 g) granulated sugar
- ¼ teaspoon (0.25 teaspoon) salt
- ½ teaspoon (0.5 teaspoon) ground cinnamon
- ¼ teaspoon (0.25 teaspoon) ground nutmeg
Instructions
-
Preheat oven to 375 degrees F. Grease a 9×13-inch baking pan.
-
Make the Dough: In a medium bowl, whisk together the flour, sugar, baking powder and salt. Use a pastry blender to cut in the cold butter until coarse crumbs form. Stir in the lightly beaten egg until just combined, creating a crumbly dough. Pat half of this dough mixture evenly into the bottom of the prepared pan, forming the crust. Place the pan with the crust and the remaining half of the dough in the refrigerator to chill while you prepare the filling.
-
Make the Filling: In a large bowl, gently toss the diced (or sliced) peaches with lemon juice. In a separate, small bowl, whisk together the flour, granulated sugar, salt, ground cinnamon, and ground nutmeg until thoroughly combined. Sprinkle this spice and sugar mixture over the peaches and mix gently until the peaches are evenly coated.
-
Remove the chilled pan from the refrigerator. Evenly spread the peach mixture over the prepared crust. Take the remaining crumbly dough from the refrigerator and scatter it over the peach layer, forming a beautiful streusel topping.
-
Bake in the preheated oven for 45 minutes, or until the top crumb layer is golden brown and the filling is bubbly. Once baked, remove from the oven and allow the bars to cool completely in the pan on a wire rack before cutting them into squares. This step is crucial for clean cuts and for the bars to set properly. Leftovers can be stored in an airtight container at room temperature for up to 4 days, or frozen for up to 2 months for a future treat.
