Last Friday marked a very special day – my mom’s birthday! Belated happy birthday wishes to the wonderful woman who inspires so much of what I do in the kitchen. She dedicated the latter part of her special day to helping me with last-minute errands for a party we were hosting on Saturday. It was a whirlwind, but truly heartwarming to spend that time together.

While I’m planning to make her absolute favorite dinner soon – a hearty sausage, pepper & mushroom risotto paired with delightful chocolate chip scones for dessert – her actual birthday evening was a little more low-key. Given the party prep chaos, she simply requested some Five Guys takeout for dinner. Simple, delicious, and exactly what we needed after a busy day.

However, I couldn’t let her birthday pass without a truly special, homemade touch. Knowing her profound love for Turtle candies – those irresistible clusters of pecans, caramel, and chocolate – I had harbored the idea of transforming this classic candy into a majestic cheesecake for quite some time. The challenge lay in figuring out how to perfectly integrate all those distinct elements into a cohesive, heavenly dessert. After much contemplation, I finally settled on a structure, and the result, I must say, was beyond my wildest dreams. It wasn’t just a cheesecake; it was a perfect, celebratory masterpiece that brought an extra layer of joy to her special day.

Ingredients

For the Crust:

  • 24 Oreo cookies, finely crushed into crumbs
  • 6 tablespoons unsalted butter, melted
  • Pinch of salt

For the Caramel-Pecan Layer:

  • 1½ cups (339 ml) caramel sauce, omit the salt for a sweeter version
  • 1 cup (99 g) chopped pecans

For the Cheesecake:

  • 32 ounces (907.19 g) cream cheese, at room temperature
  • 1¼ cups (250 g) granulated sugar
  • 4 eggs, at room temperature
  • ¾ cup (178.5 ml) heavy cream
  • 1 tablespoon vanilla extract

For the Chocolate Ganache:

  • ¾ cup (178.5 ml) heavy cream
  • ¼ cup (85.25 ml) light corn syrup
  • 8 ounces (226.8 g) semisweet chocolate, finely chopped
  • ½ teaspoon vanilla extract

Instructions

  1. Make the Crust: Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine the Oreo crumbs, melted butter, and salt until all crumbs are thoroughly moistened. Press this mixture firmly into the bottom and two inches up the sides of a 9-inch springform pan. Place the pan in the freezer for 10 minutes to help it set. Bake for 7 minutes, or until the crust is firm. Remove from the oven and cool completely on a wire rack.

  2. Prepare the Caramel-Pecan Layer: While the crust cools, in a small bowl, stir together the caramel sauce and chopped pecans until well combined. Once the crust is completely cool, pour the caramel-pecan mixture over it and gently spread it into an even layer. Refrigerate the pan while you prepare the cheesecake batter.

  3. Make the Cheesecake Filling: In a large mixing bowl, beat together the softened cream cheese and granulated sugar on medium speed until the mixture is smooth and creamy. This should take about 3 minutes, remember to scrape down the sides of the bowl periodically to ensure even mixing. Add the eggs one at a time, beating well after each addition until fully incorporated, and continue scraping down the sides of the bowl. Finally, add the heavy cream and vanilla extract, beating until just combined, approximately 1 minute. Pour this smooth batter on top of the refrigerated caramel-pecan layer in the springform pan. Bake for 55 to 65 minutes, or until the edges of the cheesecake are set, but the center still jiggles slightly when gently shaken.

  4. Cooling the Cheesecake: Once baked, turn off the oven but keep the oven door closed. Allow the cheesecake to rest in the cooling oven for 1 hour. This slow cooling process helps prevent cracking. After 1 hour, remove the cheesecake from the oven and place the pan on a wire rack to cool completely at room temperature, which will take approximately an additional 2 hours. Once fully cooled, refrigerate the cheesecake for at least 6 hours, or preferably overnight, to allow it to firm up and for the flavors to fully meld.

  5. Prepare the Chocolate Ganache: In a small saucepan, combine the heavy cream, light corn syrup, finely chopped semisweet chocolate, and vanilla extract. Place the saucepan over medium heat, stirring constantly, until the chocolate is completely melted and the mixture is smooth and glossy. Remove from heat and set the ganache aside at room temperature for about 30 minutes to cool slightly and thicken to a pourable consistency.

  6. Finish and Serve: Once the cheesecake is thoroughly chilled and the ganache has thickened, carefully pour the ganache over the top of the cheesecake. Gently spread it with an offset spatula to ensure an even layer that extends to the edges. Refrigerate the cheesecake for another 15 minutes, or until the ganache is set. When ready to serve, remove the sides of the springform pan. Garnish with additional drizzles of caramel sauce and a final sprinkle of chopped pecans for an extra touch of turtle decadence. Leftover cheesecake can be stored, tightly covered, in the refrigerator for up to 5 days. For longer storage, it can also be frozen for up to 2 months.

  7. Note for Baking: Some bakers have reported issues with caramel sauce potentially leaking through the bottom of springform pans during baking. To prevent any mess in your oven, it’s recommended to place a rimmed baking sheet on the oven rack directly below the cheesecake. This will catch any potential drips and ensure an easy cleanup.
