Today marks a truly special occasion – it’s Duke’s 3rd birthday! I can hardly believe that this playful, furry companion has been a part of our family for nearly three wonderful years. As they say, time truly flies when you’re having fun, and every moment with Duke has been an absolute joy. We welcomed him into our home just a week after returning from our beach wedding, and our lives haven’t been the same since. He brings an unparalleled energy and warmth that truly completes our household, and without him, Einstein would certainly have far more uninterrupted nap times, though I’m sure he wouldn’t have it any other way!

We are incredibly excited to celebrate Duke’s special day with all his favorite activities: spirited games of tug-of-war with Einstein, exhilarating chases after tennis balls in the backyard, and an abundance of extra affection – something Duke simply can’t get enough of. In fact, the birthday festivities started a day early, as both he and Einstein got to happily devour his delicious homemade birthday cake. The sheer delight on their faces was priceless, confirming that this simple, wholesome treat was a huge success!

  • 2 tablespoons honey
  • 3 eggs
  • cup (218.75 g) all-purpose flour
  • Yogurt, for frosting (plain, unsweetened)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly grease two 7-ounce ramekins, ensuring they are ready for the batter; set them aside.
  2. In a medium-sized mixing bowl, combine the melted coconut oil, honey, and eggs. Whisk them together thoroughly until well incorporated. Next, gradually stir in the all-purpose flour until it is completely absorbed and the batter is smooth.
  3. Carefully divide the cake batter evenly between the two prepared ramekins. Bake in the preheated oven for 15 to 20 minutes, or until the cakes are lightly golden brown and firm to the touch when gently pressed in the center.
  4. Allow the cakes to cool completely in their ramekins before attempting to remove them. Once cooled, gently invert the ramekins to release the cakes. Finally, frost generously with plain, unsweetened yogurt. Serve this delightful treat to your deserving pup!
