Rainbow Ribbon Jello Recipe

This rainbow ribbon Jello is one of my grandma’s signature desserts – she always makes it for Easter and other spring and summer parties. She layers the colors of the rainbow, but you could certainly adapt it to whatever colors you’d like!

Ingredients

For the Jello Layers:

  • 6 (3-ounce/85g) boxes Jello, 1 each red, orange, yellow, green, blue & purple (or colors of your choice)
  • 6 cups (1.5 l) boiling water
  • 3 cups (750 ml) cold water

For the White Layers:

  • 4 cups (976 ml) milk
  • 1 cup (250 ml) boiling water
  • 4 envelopes Knox gelatin
  • 24 ounces (680.39 ml) vanilla yogurt
  • 1 cup (200 g) granulated sugar
  • 4 teaspoons vanilla extract

Instructions

  1. Get 6 small bowls ready to start. In each bowl, mix 1 box of Jello with 1 cup boiling water and ½ cup cold water. Do this for all of your chosen colors simultaneously and set aside.
  2. Heat the milk in a saucepan over low heat until it reaches a lukewarm temperature. Meanwhile, in a large bowl, combine 1 cup boiling water with the 4 envelopes of Knox gelatin. Whisk continuously until the gelatin is completely dissolved and no lumps remain. Add the warm milk, vanilla yogurt, granulated sugar, and vanilla extract to the gelatin mixture. Whisk everything together thoroughly until the mixture is smooth and well combined.
  3. Pour the first chosen color of Jello into a 9×13-inch pan. Refrigerate until it is completely set, which typically takes about 45 minutes (this time can vary based on your refrigerator’s temperature and how full it is). Once the first colored layer is firm, very gently pour 1½ cups of the white yogurt mixture on top of it. Return the pan to the refrigerator for another 45 minutes, or until this white layer is also set. Repeat this layering process with the remaining colors and the white yogurt mixture until all the colored Jello is used. (You may have some yogurt mixture leftover, depending on your pan size and layer thickness). Once the final layer is poured and set, refrigerate the entire dessert for at least an additional hour to ensure it is thoroughly firm before serving. Store any leftovers in the refrigerator.
