Baked Brie with Blackberry Compote

- 15 ounce (425.24 g) wheel of brie cheese
- ¼ cup (62.5 ml) water
- 2 tablespoons granulated sugar
- 2¼ teaspoons (2.25 teaspoons) lemon juice
- 6 ounces (170.1 g) Driscoll’s blackberries, divided
Instructions
- Preheat oven to 350 degrees F. Carefully slice the rind off the top of the brie wheel, making sure to leave about a ½-inch border along the edges. This allows the cheese to melt beautifully while maintaining its shape. Place the prepared brie on a parchment-lined baking sheet and bake for 12 to 15 minutes, or until the cheese is wonderfully soft and just beginning to melt and ooze.
- Meanwhile, prepare the blackberry compote. In a small saucepan, combine the water, granulated sugar, and lemon juice. Heat this mixture over medium heat, stirring continuously until the sugar has completely dissolved. Bring the mixture to a gentle boil and allow it to reduce, simmering until it thickens slightly, yielding about 2 tablespoons of concentrated syrup. This reduction process intensifies the flavors.
- Pour the warm syrup into a blender. Add 1 cup of the Driscoll’s blackberries and blend until you achieve a smooth puree. For a perfectly silky compote, press the puree through a fine-mesh sieve set over a small bowl to remove all the tiny seeds. Once the puree is sieved, stir in the remaining whole blackberries; this adds a lovely texture and bursts of fresh fruit.
- Once the brie is perfectly baked and gooey, use a large, flat metal spatula to carefully transfer it to your preferred serving platter. Generously spoon the warm blackberry compote over the top of the melted brie. Serve this exquisite appetizer immediately with your favorite crackers, toasted baguette slices, or even crisp apple slices for a delightful contrast.
