Classic Corn and Mixed Vegetable Casserole for Thanksgiving

The Ultimate Corn and Mixed Vegetable Casserole: A Timeless Holiday Tradition

Every family cherishes its unique holiday traditions, and for ours, this beloved Corn and Mixed Vegetable Casserole holds a special place at the heart of our festive gatherings. For as long as I can remember, my aunt has meticulously prepared this delightful dish for Thanksgiving, and it often graces our tables for Christmas and Easter celebrations too. Its popularity is undeniable; last year, not a single speck was left, a testament to its irresistible charm and consistent appeal.

A few weeks ago, I reached out to my aunt, hoping to obtain the cherished recipe to share with you all, and she graciously sent it along. She recounted that a friend had brought it to a picnic potluck many years ago, and the original recipe was simply titled “Lent Casserole.” The reason behind this name remains a mystery, though one might speculate it’s due to its meatless composition. Regardless of its origin or name, what truly matters is that this casserole consistently disappears from the serving dish, becoming a guaranteed hit among holiday favorites. Its creamy texture, rich flavors, and comforting warmth make it an essential part of our holiday spread, year after year.

This casserole isn’t just a delicious dish; it’s a symbol of togetherness, comfort, and the enduring culinary legacy passed down through generations. It represents the shared joy of holiday meals and the simple pleasure of indulging in a well-loved recipe that brings smiles to everyone’s faces. The beauty of this recipe lies in its simplicity and the way it elevates humble vegetables into something truly extraordinary, making even the most vegetable-averse family members ask for seconds.

Creamy Corn and Mixed Vegetable Casserole, a delightful side dish

Why This Vegetable Casserole is a Holiday Essential

What makes this Corn and Mixed Vegetable Casserole so universally adored? It’s more than just a side dish; it’s an experience. The combination of tender vegetables, enveloped in a rich, creamy, and undeniably cheesy sauce, all crowned with a buttery, golden-brown Ritz cracker topping, creates a symphony of textures and flavors that is both comforting and incredibly satisfying. This dish offers a perfect balance to the heavier main courses often found on holiday menus, providing a wholesome yet indulgent vegetable component.

One of its most appealing attributes is its incredible versatility. While the recipe calls for a specific mix of vegetables, it’s remarkably adaptable to your personal preferences or what you have on hand. Love corn? You could easily make this an all-corn casserole. Prefer peas and carrots? Go for it! Asparagus, green beans, bell peppers, or even diced potatoes can be incorporated to create your ideal veggie combination. This flexibility means you can tailor the dish to suit any palate or dietary need, ensuring it remains a favorite for everyone at the table.

Beyond its delicious taste and adaptability, this casserole is a dream come true for busy holiday hosts. The ability to prepare it a day in advance significantly reduces stress on the actual day of the celebration. Simply assemble the casserole, cover it, refrigerate, and then pop it into the oven when you’re ready to bake. This make-ahead convenience is a game-changer, allowing you more time to focus on other aspects of your holiday meal or, more importantly, to enjoy precious moments with your loved ones. The minimal active cooking time also makes it an excellent choice for novice cooks or those looking for a straightforward yet impressive dish.

Crafting Your Perfect Vegetable Casserole: Tips and Variations

To ensure your Corn and Mixed Vegetable Casserole is nothing short of spectacular, consider these tips and variations:

  • Choosing Your Vegetables: While canned vegetables offer convenience and consistent results (especially when properly drained), you can certainly experiment with fresh or frozen options. If using fresh vegetables, blanch them slightly before adding to the mix to ensure they cook through evenly in the casserole. Frozen vegetables can be thawed and drained thoroughly to prevent excess moisture.
  • Cheese Matters: American cheese provides a unique melt and creaminess that is traditional in this recipe. However, feel free to experiment with other melting cheeses like mild cheddar, Monterey Jack, or a blend of your favorites for a different flavor profile. Grating your own cheese from a block will always yield a superior melt and flavor compared to pre-shredded varieties.
  • Cracker Topping Alternatives: The buttery Ritz cracker topping is iconic for a reason, adding a salty crunch that perfectly complements the creamy interior. If Ritz crackers aren’t available or you prefer an alternative, crushed butter crackers, saltines, or even panko breadcrumbs mixed with melted butter can work wonderfully. For a gluten-free option, use gluten-free crackers.
  • Enhancing Flavor: A pinch of garlic powder, onion powder, or a dash of black pepper can further enhance the savory notes of the casserole. A touch of dried thyme or a hint of smoked paprika could also add an interesting depth of flavor.
  • Make It Your Own: This recipe is a fantastic base. Don’t hesitate to add a splash of hot sauce for a little kick, a sprinkle of fresh herbs like chives or parsley before serving, or even a few cooked and crumbled bacon bits for a non-vegetarian twist.

Does your family have any go-to holiday dishes that make an appearance year after year? These culinary traditions are what truly make holiday gatherings so memorable and special.

Ingredients

  • ½ cup (113.5 g) salted butter, divided
  • 1 cup (101 g) finely chopped celery
  • ½ cup (80 g) finely chopped yellow onion
  • 30 ounces (850.49 g) canned mixed vegetables, drained
  • 15 ounces (425.24 g) canned whole corn, drained
  • 4 ounces (113.4 g) American cheese, grated or finely chopped (about 1 cup)
  • ¾ cup (168 ml) mayonnaise
  • 1 sleeve Ritz crackers, crushed

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt half of the butter over medium heat in a sauté pan. Add the finely chopped celery and onion and cook until softened, about 8 to 10 minutes. Remove the pan from the heat and transfer the cooked vegetables to a large mixing bowl.
  3. To the bowl with the cooked celery and onion, add the drained mixed vegetables, drained whole corn, grated American cheese, and mayonnaise. Stir all the ingredients together thoroughly until well combined. Transfer this mixture evenly into a square casserole dish.
  4. Sprinkle the crushed Ritz crackers generously over the top of the vegetable mixture. Melt the remaining butter and drizzle it evenly over the cracker topping.
  5. Bake the casserole for 30 to 35 minutes, or until the topping is golden brown and the casserole is bubbly around the edges. Allow the casserole to sit and rest for 10 minutes before serving. This allows the flavors to meld and the casserole to set slightly, making it easier to serve.

Notes

  • Make Ahead: This casserole can be easily assembled up to one day in advance. Simply cover the unbaked casserole dish tightly and refrigerate until you are ready to bake. If baking from cold, you may need to add an extra 5-10 minutes to the baking time to ensure it heats through completely.
