The Irresistible Allure of Sweet and Savory Breakfasts

There’s a special kind of magic that happens when sweet maple syrup meets savory bacon on a breakfast plate. It’s a classic diner experience I adore, where bacon and sausage inevitably find their way into a pool of syrup, creating an unexpected flavor burst. These waffles capture that very essence. By incorporating the glorious brown sugar bacon directly into the batter, every bite offers that coveted sweet and savory combination, amplified by the golden drizzle of maple syrup you’ll add on top.

This recipe truly is foolproof and guaranteed to impress. Whether you’re hosting guests, treating your family, or simply elevating a weekend brunch, these waffles will make you a breakfast hero. The blend of rich buttermilk, warm vanilla, and the captivating crunch of caramelized bacon bits creates a symphony of flavors and textures that few can resist. They are light and airy on the inside, with a perfectly crisp exterior—the very definition of waffle perfection.

Unlocking Waffle Perfection: Tips & Tricks

To ensure your Brown Sugar-Bacon Buttermilk Waffles turn out absolutely perfect every time, consider these insights and pro tips:

Choosing Your Waffle Maker

The right waffle maker can make all the difference. I personally rely on this Breville model, and I can’t recommend it enough. It consistently delivers exceptional results, far surpassing any traditional round Belgian-style waffle maker I’ve used in the past. Its various settings allow for precise control over browning and crispness, ensuring you can achieve your desired level of perfection for every single waffle.

The Secret to Amazing Brown Sugar Bacon

When preparing the brown sugar bacon, don’t be shy with the sugar. The magic lies in the caramelization process, where the brown sugar melts and forms a beautiful, glossy glaze over the bacon as it bakes. This creates a deeply flavorful and satisfyingly crunchy element that is crucial to the waffles’ unique taste. A quick tip from personal experience: you might want to bake a few extra slices of bacon than the recipe calls for. It’s highly probable you’ll find yourself snacking on the sweet, crispy bits while you’re chopping them up – it’s simply irresistible!

Mixing the Batter Just Right

Just like with pancakes, the key to light and fluffy waffles is not to overmix the batter. Once you combine the wet and dry ingredients, fold them gently with a rubber spatula until just moistened. A few lumps are perfectly fine, even desirable! Overmixing can develop the gluten in the flour too much, leading to tough waffles. Once the dry ingredients are almost incorporated, gently fold in the chopped brown sugar bacon, ensuring it’s evenly distributed without excessive stirring.

Serving Suggestions and Storage

These Brown Sugar-Bacon Buttermilk Waffles are fantastic served warm with a pat of butter and a generous pour of high-quality maple syrup. For an extra touch of indulgence, consider a dusting of powdered sugar, a dollop of whipped cream, or even a side of fresh berries to complement the rich flavors. This recipe yields a substantial batch—approximately 11-12 square waffles or 7 Belgian-style waffles—making it ideal for feeding a crowd. Alternatively, prepare a large batch to stock your freezer for convenient, ready-made breakfasts during busy weekdays. My preferred method for reheating both fresh and frozen waffles is in a toaster oven, which helps them regain their wonderful crispness.

Whether you’re a lifelong bacon enthusiast or simply seeking a remarkable breakfast creation, these waffles are guaranteed to exceed your expectations. Their perfect balance of crispy texture and soft interior, combined with the unforgettable taste of sweet and savory bacon, makes them truly phenomenal.

Brown Sugar-Bacon Buttermilk Waffles!

Ingredients

For the Bacon
  • 10 slices of bacon
  • ¼ cup (55 g) light brown sugar
For the Waffles
  • 3 cups (375 g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¼ cup (55 g) light brown sugar
  • ⅔ cup (145.33 ml) canola or grapeseed oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2½ cups (600 ml) buttermilk
Special Equipment
  • Waffle Maker, I have a Breville and love it!

Instructions

  1. Make the Bacon: Preheat oven to 375 degrees F (190°C). Line a baking sheet with parchment paper, a silicone baking mat, or spray a baking sheet with non-stick cooking spray and line with foil. Arrange bacon in a single layer on the baking sheet. Sprinkle generously with the brown sugar. Place in the upper third of the oven and bake until sugar is caramelized and bacon is brown and crispy, about 10 to 15 minutes. Remove from oven. Immediately remove bacon slices using a pair of tongs. Place them on a cutting board (not paper towels, they’ll stick!) to cool. Once cool, chop the bacon into bite-size bits and set aside.
  2. Make the Waffles: Preheat your waffle iron.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and brown sugar. In a medium bowl, whisk together the eggs, oil, buttermilk, and vanilla extract. Add the wet ingredients to the dry ingredients and fold with a rubber spatula. Once almost fully incorporated, add the chopped bacon and stir gently. Mix only until most of the dry ingredients are moistened in the batter; like pancakes, it’s good to have a slightly lumpy batter.
  4. Cook the waffles according to your waffle machine instructions.
  5. Serve immediately with butter and maple syrup. Leftover waffles can be stored in an airtight container in the refrigerator for up to 4 days, or wrapped individually in plastic wrap and placed in a freezer bag for up to 2 months. My favorite way to reheat them (whether fresh or frozen) is in a toaster oven for maximum crispness.
