  • 1 teaspoon ground cinnamon
  • 1 cup (150 g) ripe bananas, pureed or finely mashed (about 2 medium bananas)
  • 1 teaspoon vanilla extract
  • 1 cup (200 g) granulated sugar
  • ½ cup (110 g) light brown sugar, firmly packed
  • cups (416.5 ml) heavy cream
  • 1 large French bread loaf, about 5-6 cups torn up

For the Bananas Foster Sauce:

  • ½ cup (113.5 g) unsalted butter
  • ½ cup (110 g) firmly packed brown sugar
  • cup (79.33 ml) heavy cream
  • 2 bananas, sliced
  • 3 tablespoons rum

Instructions 

  • 1. Preheat the oven to 350°F (175°C).
  • 2. In a large bowl, combine the eggs and egg yolks and whisk until light and frothy.
  • 3. Add in the ground nutmeg, ground cinnamon, pureed banana, and vanilla extract. Whisk thoroughly until all ingredients are fully incorporated.
  • 4. Gradually add the granulated sugar and light brown sugar, continuing to whisk until completely dissolved and integrated into the mixture.
  • 5. Pour in the heavy cream and whisk gently until it is well combined with the egg and sugar mixture.
  • 6. Add the torn French bread pieces to the egg mixture. Using a spoon or spatula, gently mix until the bread has absorbed most of the rich custard. Ensure all pieces are well-coated.
  • 7. Carefully pour the soaked bread mixture into an 8×8-inch baking dish. Let it rest for 30 minutes to allow the bread to fully absorb the liquid and achieve maximum moisture.
  • 8. To create a water bath, place the baking dish containing the bread pudding into a slightly larger roasting pan. Pour about 1 inch of hot water into the larger pan, surrounding the bread pudding dish. This helps ensure even cooking and a silky-smooth custard.
  • 9. Bake uncovered for approximately 1 hour, or until the custard is set and a knife inserted into the center comes out mostly clean. The top should be golden brown. Serve warm, generously drizzled with the Bananas Foster Sauce.
  • 1. To make the Bananas Foster Sauce: Heat a large skillet over low heat.
  • 2. Add butter and brown sugar to the skillet. Cook, stirring constantly, just until the sugar begins to melt into the butter, forming a fragrant, syrupy base.
  • 3. Add the sliced bananas to the skillet. Moving the skillet back and forth, gently cook for about 1 minute, allowing the bananas to soften slightly and absorb the caramel flavors.
  • 4. Carefully remove the skillet from the heat and add the rum. Return the pan to the stove and, if comfortable, tilt the pan slightly to ignite the rum with a long match or lighter. Allow the alcohol to burn off completely, then remove from heat. (Alternatively, if not igniting, simply let the rum simmer for a minute to cook off some alcohol, then proceed).
  • 5. After the alcohol has cooked off (or burned off), add the heavy cream to the sauce. Whisk well to ensure it is fully incorporated, creating a smooth, rich sauce.
