Celebrating Seven Wonderful Years with My Best Boy, Einstein

It feels like just yesterday we were celebrating his first year, a tiny ball of energy navigating a world of new smells and sounds. Yet, here we are, marking a truly special milestone: Einstein officially turned seven years old yesterday! How time flies when you’re sharing life with such an incredible companion. It’s truly difficult to recall a time before my sweet buddy joined my life. For seven amazing years (minus a brief six-week separation when he was a puppy), he has been a constant, comforting presence, growing from an “insane puppy” into an “energetic toddler,” and finally settling into the role of a content, playful adult who still approaches every day with boundless joy and curiosity. He particularly loves to patrol the kitchen when I’m baking, taking up his favorite position at my feet, patiently waiting for the inevitable shower of crumbs and sugar that accompanies any serious culinary endeavor.

Einstein’s Unwavering Spirit and Adaptability

This past year has been a testament to Einstein’s amazing character. He’s been an absolute trooper, adapting to significant life changes with grace and good humor. First, he navigated the move into a brand-new house with me and my Chief Culinary Consultant (who also happens to be my husband!). Settling into a new environment can be stressful for any pet, but Einstein took it all in stride, always happy as long as he was with his people. Then, as if a new home wasn’t enough, we introduced a rambunctious little brother, Duke, into the mix. This addition brought a whole new level of excitement and, let’s be honest, a good deal of puppy mischief. Yet, Einstein handled it all beautifully, embracing his role as the older, wiser sibling.

His patience with Duke is truly remarkable. Duke, with all the boundless energy of a young pup, still tugs mercilessly on Einstein’s tail and ears, testing the boundaries of sibling tolerance. Einstein, a paragon of canine composure, waits until he has absolutely reached his breaking point before he lets out a low, rumbling grumble – his unmistakable way of letting Duke know that enough is enough. This gentle correction, usually accompanied by a shift in posture rather than any aggressive act, perfectly encapsulates Einstein’s wonderful disposition. He’s not just a pet; he’s a phenomenal dog with a truly expressive personality, a natural ability to roll with life’s punches, and an uncanny knack for sensing when someone is upset. Above all, he simply loves to be wherever you are, a true shadow and steadfast companion.

Considering all the joy and companionship Einstein brings into our lives, there was no way his birthday could pass without a special celebration, complete with a homemade treat designed just for him. This has become a cherished annual tradition, a way to show our appreciation for his unwavering love and loyalty. The Perfect Birthday Treat: Doggie Pupcakes with Peanut Butter-Yogurt Frosting

For his seventh birthday, I decided on these delightful Doggie Pupcakes, a recipe packed with wholesome, dog-friendly ingredients. The beauty of these pupcakes lies not only in their deliciousness but also in their simplicity; they come together in less than 10 minutes of active prep time, making them a fantastic option for busy pet parents. Every ingredient is chosen for its nutritional benefits and safety for our furry friends. Whole wheat flour provides essential fiber, while unsweetened applesauce adds natural sweetness and moisture without any added sugars that can be harmful to dogs. Vegetable oil ensures a moist crumb, and a single egg binds everything together, adding a touch of protein.

To top these miniature delights, I whipped up a simple yet irresistible frosting using homemade peanut butter and plain Greek yogurt. Peanut butter is a beloved dog treat, offering healthy fats and protein, and Greek yogurt provides beneficial probiotics for gut health. This combination creates a creamy, spreadable frosting that’s both tasty and good for them. It’s a treat you can feel good about giving your dog, knowing exactly what’s in it.

The birthday celebration itself was adorable. Einstein sat so patiently, his eyes fixed on the lit candle atop his pupcake, as we all sang “Happy Birthday” and wished him many, many more happy years. The anticipation on his face was palpable, a testament to his understanding of special moments (or perhaps just his superb treat-sensing abilities!).

The moment the candle was extinguished, Einstein wasted no time. He sat straight up, offering his paw – his signature move for requesting a treat – in exchange for his delicious birthday reward. One pupcake disappeared in a flash, but his quest wasn’t over. His eyes immediately darted around, clearly searching for more. His “torture” began shortly after, as he had to watch his little brother Duke enjoy his own pupcake. For the next hour, Einstein remained steadfast, staring intently at the counter and occasionally letting out soft, pleading whines, convinced that another treat was surely just around the corner. It was a classic Einstein moment, full of charm and a touch of dramatic flair!

All in all, Einstein had a fabulous, pampered birthday, filled with love, treats, and the joy of being surrounded by his family. Ingredients

For the Pupcakes:

  • ½ cup (60 g) whole wheat flour, can substitute other if wheat sensitive
  • 1 teaspoon baking powder
  • ⅓ cup (72.67 ml) vegetable oil
  • ⅓ cup (81.33 ml) unsweetened applesauce
  • 1 egg
  • 2 tablespoons honey

For the Frosting:

  • 3 tablespoons Greek yogurt
  • 1.5 tablespoons creamy peanut butter

Instructions

  1. Preheat oven to 350 degrees F. Line 6 wells of a standard muffin tin with paper liners, or spray with non-stick cooking spray; set aside.
  2. In a medium bowl, whisk together the flour and baking powder. Add the vegetable oil, applesauce, egg and honey, and whisk gently to combine. Divide the batter between the prepared muffin cups and bake until a toothpick inserted into the center comes out clean, 10 to 15 minutes. Allow the pupcakes to cool completely before frosting and serving.
  3. To make the frosting, stir together the yogurt and peanut butter, then spread on top of each pupcake before serving. The pupcakes can be kept for up to 3 days in the refrigerator.
