Ingredients

  • ½ cup (113.5 g) unsalted butter, at room temperature
  • 1 cup (220 g) light brown sugar
  • ½ cup (129 g) creamy peanut butter
  • 1 egg
  • 2 teaspoons vanilla extract
  • ¾ cup (93.75 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • ¼ teaspoon (0.25 teaspoon) baking powder
  • ¼ teaspoon (0.25 teaspoon) salt
  • cups (121.5 g) old-fashioned oats
  • 1 cup (180 g) semisweet chocolate chips
  • 1 cup (236.59 g) M&M’s + additional for top of bars

Instructions 

  • Preheat the oven to 350 degrees F (175 C). Grease a 9×13-inch baking pan and line with parchment paper so that it hangs over two sides for easy removal.
  • In a small bowl, whisk together the all-purpose flour, baking soda, cornstarch, baking powder, and salt. Set aside.
  • In a large mixing bowl, using an electric mixer on medium speed, cream together the softened unsalted butter, light brown sugar, and creamy peanut butter until the mixture is light and fluffy, which usually takes about 3 minutes. Add the egg and vanilla extract, mixing until just combined, and be sure to scrape down the sides of the bowl as needed to ensure everything is incorporated. Reduce the mixer speed to low, then gradually add the dry flour mixture to the wet ingredients, mixing only until just combined. Finally, using a sturdy rubber spatula, gently stir in the old-fashioned oats, semisweet chocolate chips, and 1 cup of M&M’s by hand.
  • Turn the prepared dough out into your greased and parchment-lined 9×13-inch baking pan. Press and spread the dough into an even layer using your hands or the back of a spatula. For an extra pop of color and visual appeal, press additional M&M’s onto the top surface of the dough. Bake for 15 to 17 minutes, or until the edges are set and lightly browned, while the very center still looks slightly soft or undercooked. This ensures a wonderfully chewy bar. Remove the pan from the oven and allow the bars to cool completely in the pan on a wire rack before attempting to cut them. Once cooled, use the parchment overhangs to lift the whole slab of bars out of the pan, then cut into 24 uniform squares. The baked bars should be stored in an airtight container at room temperature for up to 4 days, or they can be frozen for longer storage.
