Ultimate Slow Cooker Gnocchi in Creamy Pork Sauce: Your New Favorite Winter Comfort Meal
There’s nothing quite like a warm, hearty meal to ward off the chill of winter, and this Slow Cooker Gnocchi in Creamy Pork Sauce is the epitome of comfort food. I first prepared this incredible dish for a Sunday dinner, just before the holidays, and it was an instant hit. Every single person at the table raved about its rich flavors and melt-in-your-mouth tenderness. What truly sets this recipe apart is its surprising simplicity, making it the ideal choice for busy weeknights or relaxed weekend gatherings with family and friends. Imagine a succulent pork shoulder, slow-simmered in a savory base of crushed tomatoes and aromatic seasonings, until it’s so tender it effortlessly falls apart. The magic happens when creamy gnocchi are stirred into this luscious mixture, transforming it into a complete, satisfying meal. A final flourish of freshly grated cheese and a sprinkle of vibrant parsley, paired with a crusty loaf of Italian bread, and dinner is magnificently served.

Why the Slow Cooker is Your Best Friend for This Dish
The slow cooker isn’t just a kitchen appliance; it’s a culinary hero, especially for recipes like this Creamy Pork and Gnocchi. Its ability to gently cook ingredients over several hours yields unparalleled tenderness and depth of flavor that simply can’t be rushed. For a tougher cut like pork shoulder, often called pork butt, the low and slow method breaks down connective tissues, transforming it into incredibly tender, shreddable meat. This process also allows the flavors of the tomatoes, Italian seasoning, and garlic to meld and intensify, creating a truly rich and cohesive sauce. Beyond the superior taste and texture, the slow cooker offers incredible convenience. With minimal hands-on prep in the morning, you can set it and forget it, returning home to the enticing aroma of a delicious meal waiting for you. It’s perfect for busy families, meal prepping, or simply enjoying more free time without compromising on a homemade, flavorful dinner.
Crafting the Perfect Sauce: Inspiration and Adjustments
The inspiration for this delightful dish came from a recipe found on Bev Cooks, but I’ve made a couple of key adjustments to tailor it to my family’s preferences and enhance its appeal. My primary modification involved doubling the original recipe. Sundays at our house often mean feeding at least five people, and we absolutely adore having ample leftovers for quick and easy lunches or dinners throughout the week. This larger batch ensures everyone gets their fill, with plenty to spare. Secondly, while the original recipe called for diced tomatoes, I opted for canned crushed tomatoes instead. My preference leans towards a smoother, richer, and more deeply integrated tomato sauce, free from the larger chunks that diced tomatoes provide. This simple swap results in a velvety texture that perfectly coats the gnocchi and complements the tender pork. These minor tweaks truly elevate the dish, making it an amazing and incredibly easy go-to slow cooker meal that has earned a permanent spot in my recipe rotation.

Key Ingredients for a Sensational Meal
Understanding the role of each ingredient is crucial for achieving the best results with this Slow Cooker Gnocchi in Creamy Pork Sauce. Each component plays a vital part in building the dish’s incredible flavor profile and texture.
The Star: Bone-In Pork Shoulder
A 4 to 5-pound bone-in pork shoulder, often labeled as pork butt, is the foundation of this recipe. This cut is perfect for slow cooking because its marbling and connective tissues break down beautifully over a long cooking period, rendering the meat incredibly tender and juicy. The bone also contributes to the richness of the sauce, infusing it with extra flavor as it cooks down. Don’t worry about the fat; it helps keep the pork moist and flavorful, and much of it can be easily removed after cooking.
The Base: Crushed Tomatoes
Two 28-ounce cans of crushed tomatoes form the luscious sauce base. As mentioned, opting for crushed tomatoes over diced creates a smoother, more uniform sauce that clings wonderfully to the gnocchi and shredded pork. The rich, slightly sweet tang of good quality crushed tomatoes provides the perfect backdrop for the savory pork and seasonings, creating a robust and comforting flavor.
The Aromatic Duo: Onion and Garlic
A medium yellow onion, diced, and six cloves of minced garlic are essential for building a deep, aromatic foundation. These humble ingredients simmer down over hours, releasing their sweet and pungent flavors, which become an integral part of the overall sauce. They provide a foundational layer of savory goodness that truly elevates the dish.
The Seasoning: Italian Seasoning, Salt, and Pepper
One tablespoon of Italian seasoning is all it takes to impart classic Mediterranean flavors, a blend typically including oregano, basil, thyme, rosemary, and marjoram. This herb blend perfectly complements both the pork and the tomato sauce. Of course, salt and freshly ground black pepper are crucial for seasoning the pork and balancing all the flavors, so remember to season to taste.
The Creamy Finish: Heavy Cream
Half a cup of heavy cream is stirred in at the very end, adding a luxurious richness and a silky texture to the sauce. It transforms the robust tomato base into a creamy, indulgent concoction that beautifully coats every piece of gnocchi and shredded pork. This ingredient is key to achieving that irresistible “creamy” in “creamy pork sauce.”
The Doughy Delight: Dried Gnocchi
Two pounds of dried gnocchi are the perfect choice for this slow cooker recipe. You’ll typically find dried gnocchi in the pasta aisle of your supermarket (brands like DeLallo are excellent options). It’s crucial to use dried gnocchi, not fresh or refrigerated varieties, which can become too soft or even disintegrate during the extended cooking time in the slow cooker. Dried gnocchi holds its shape and texture beautifully, absorbing the incredible flavors of the sauce without becoming mushy.
Serving Suggestions and Customizations
This Slow Cooker Gnocchi in Creamy Pork Sauce is a complete meal on its own, but it truly shines when served with a few thoughtful additions. A generous sprinkle of freshly grated Parmesan or Romano cheese adds a salty, umami kick that complements the rich sauce. A handful of chopped fresh parsley brightens the flavors and adds a pop of color. Don’t forget a loaf of crusty Italian bread – it’s perfect for soaking up every last drop of the delicious sauce!
Feeling creative? This recipe is incredibly versatile and allows for easy customization:
- Vegetable Boost: Add diced carrots, celery, or bell peppers along with the onion at the start of cooking for extra nutrients and flavor. Sautéing them briefly before adding to the slow cooker can enhance their sweetness.
- Spice It Up: For a touch of heat, a pinch of red pepper flakes can be added with the Italian seasoning.
- Herb Variations: While Italian seasoning is fantastic, fresh herbs like rosemary or thyme sprigs can be tucked in during the slow cooking process for an even more robust aroma. Remove them before serving.
- Greens: Stir in a handful of fresh spinach or kale during the last 30 minutes of cooking for a healthy green boost.
- Different Cheeses: Experiment with other cheeses like provolone, fontina, or even a smoked mozzarella stirred in at the end for different flavor profiles.
Make-Ahead and Leftover Tips
One of the many advantages of slow cooker meals is how wonderfully they hold up, and this gnocchi dish is no exception. It tastes even better the next day, as the flavors have more time to meld and deepen. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, gently warm portions on the stovetop over low heat, or in the microwave, adding a splash of chicken broth or water if the sauce has thickened too much. This recipe is also great for freezing! Once cooled, transfer the gnocchi and pork sauce to freezer-safe containers or bags, leaving a little headspace. It can be frozen for up to 2-3 months. Thaw overnight in the refrigerator before reheating.
This hearty and comforting dish is sure to become a beloved favorite in your home, bringing warmth and deliciousness to any occasion, especially on those chilly winter evenings. Enjoy the ease and incredible flavor that this slow cooker masterpiece brings to your table!

- 4 to 5 pound (1.8 to 2.3 kg) bone-in pork shoulder
- 56 ounce (1.59 kg) canned crushed tomatoes (two 28-ounce cans)
- 1 tablespoon Italian seasoning
- Salt and pepper, to taste
- ½ cup (119 g) heavy cream
- 2 pounds (907.18 g) dried gnocchi
Instructions
- Spray a 6-quart slow cooker with non-stick cooking spray.
- Place the diced onion in the bottom of the slow cooker and top with the minced garlic. Place the pork shoulder on top of the onion and garlic. Pour one can of the crushed tomatoes over the pork and around the sides. Sprinkle the Italian seasoning all over and season generously with salt and pepper, to taste. Pour the second can of crushed tomatoes over the top. Cover and cook on low for 11 hours.
- After 11 hours, carefully remove the pork shoulder from the slow cooker. Discard the bone and any excess layer of fat. Shred the pork with two forks and return it to the slow cooker. Stir in the heavy cream until well combined, then stir in the dried gnocchi. Cover and cook for an additional 1 hour on low, or until gnocchi is tender. Serve immediately with grated Parmesan or Romano cheese and fresh parsley.
Notes
Note: Dried gnocchi are typically found in the pasta aisle at the supermarket. Do not use fresh or refrigerated gnocchi, as they will become too soft and potentially mushy during the long cooking time in the slow cooker.
