Why You’ll Love This Heartwarming Turkey Wild Rice Soup
This Turkey Wild Rice Soup isn’t just a recipe; it’s a solution to the perennial post-holiday dilemma and a celebration of robust, wholesome flavors. Here’s why it’s bound to become a staple in your kitchen:
- Effortless Leftover Transformation: Turn your Thanksgiving turkey from a delicious memory into an exciting new meal. It’s the ultimate way to reduce food waste and savor every last bit of your holiday feast.
- Rich and Satisfying Flavor: The combination of savory turkey, umami-rich cremini mushrooms, and a hearty broth creates a depth of flavor that is incredibly comforting and satisfying. Each spoonful is packed with warmth and goodness.
- Simple & Straightforward: Despite its gourmet taste, this soup requires minimal active cooking time. With about 20 minutes of prep and an hour on the stove, it’s perfect for a cozy weeknight meal after a busy day.
- Nutrient-Packed Goodness: Wild rice adds a fantastic source of fiber and essential nutrients, while lean turkey provides protein. Along with wholesome vegetables, this soup offers a balanced and nourishing meal.
- Freezer-Friendly: One of the best qualities of this soup is how wonderfully it freezes. The wild rice maintains its texture beautifully, making it an excellent option for meal prepping and enjoying homemade comfort food whenever you crave it.
- Versatile and Adaptable: Easily customize it to your taste. Swap turkey for chicken, adjust vegetables, or add a touch of cream for extra indulgence. This flexibility ensures it suits everyone’s preferences.

Essential Ingredients and Smart Substitutions
Crafting the perfect Turkey Wild Rice Soup starts with quality ingredients, but also offers flexibility for what you have on hand.
The Core Components:
- Olive Oil: The base for sautéing, adding a subtle richness. Any neutral cooking oil can be used.
- Cremini Mushrooms: These provide a wonderful earthy depth and savory umami flavor. Slicing them ensures they meld perfectly into the soup. Feel free to use button mushrooms, shiitake, or a mix of your favorite varieties. If you’re not a mushroom fan, you can certainly omit them without compromising the soup’s integrity too much, but you will miss out on a layer of flavor.
- Chopped Onion & Minced Garlic: The aromatic foundation of almost any great soup. These humble ingredients create a fragrant and flavorful base.
- Turkey Broth: The star liquid that brings everything together. Homemade turkey broth will yield the most profound flavor, but a good quality store-bought turkey or chicken broth works perfectly. Around the holidays, turkey broth is readily available; otherwise, chicken broth is a fantastic year-round alternative. You can even use vegetable broth for a lighter touch, though the flavor will be less rich.
- Long Grain Wild Rice: This is what gives the soup its signature texture and nutty flavor. Wild rice is actually a grass, not a grain, and it holds its shape well even after cooking and freezing, unlike some other rice varieties. Avoid quick-cooking wild rice, as it won’t offer the same texture or depth.
- Bay Leaf: A simple addition that imparts a subtle, herbaceous note, enhancing the overall aroma of the soup. Remember to remove it before serving!
- Cooked Turkey: The highlight of using your leftovers! Shredded or diced into bite-sized pieces, both white and dark meat work beautifully. If you don’t have leftover turkey, cooked chicken (rotisserie chicken is a great shortcut!) is an excellent substitute.
- Chopped Parsley: Adds a pop of fresh color and brightens the flavors just before serving. Fresh dill or thyme could also be lovely additions.
- Salt and Pepper: Essential for seasoning to taste. Don’t be shy about tasting and adjusting!
Optional Enhancements:
- Creamy Indulgence: For an extra luxurious and creamy texture, stir in up to 2 cups of heavy cream, half-and-half, or even some full-fat coconut milk (for a dairy-free option) during the last few minutes of simmering. This transforms it into a truly decadent experience.
- Added Vegetables: To boost nutrition and flavor, consider adding diced carrots and celery along with the onions and mushrooms. A handful of frozen peas or corn stirred in at the end can also add sweetness and color.
- Fresh Herbs: Beyond parsley, a sprig of fresh thyme or sage cooked with the broth can infuse wonderful seasonal flavors.
Making Turkey Wild Rice Soup – Step-by-Step Instructions
This recipe is designed for ease, allowing you to create a comforting meal with minimal effort.
- Build the Flavor Base: In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Add the sliced cremini mushrooms and chopped onions. Cook, stirring occasionally, for 6 to 7 minutes, or until they have softened and the mushrooms have released their moisture and started to brown slightly. This step is crucial for developing deep flavors.
- Infuse with Garlic: Add the minced garlic to the pot and stir constantly for about 1 minute. Be careful not to let the garlic burn, as it can turn bitter. You’re looking for it to become fragrant.
- Simmer to Perfection: Pour in the turkey broth, add the long grain wild rice, and drop in the bay leaf. Stir everything together, then cover the pot with a lid and bring the mixture to a gentle simmer. Once simmering, reduce the heat to medium-low.
- Introduce the Turkey: Gently stir in your cooked turkey pieces. Since the turkey is already cooked, it just needs to heat through and absorb the flavors of the soup.
- Cook Until Tender: Continue to simmer the soup, covered, for approximately 45 minutes, or until the wild rice is fully cooked through and tender with a pleasant chew. Cooking times for wild rice can vary slightly, so taste a grain to ensure it’s done to your liking.
- Finish and Serve: Carefully remove and discard the bay leaf. Stir in the fresh chopped parsley, and season generously with salt and black pepper to taste. Ladle the hot soup into bowls and serve immediately.

Perfect Pairings: What to Serve with Your Soup
This hearty Turkey Wild Rice Soup is a meal in itself, but pairing it with the right accompaniments can elevate the entire dining experience. Here are some fantastic serving ideas:
Bread, Glorious Bread!
Few things are as comforting as dipping a piece of warm, crusty bread into a rich bowl of soup. This turkey wild rice soup is no exception, pairing perfectly with virtually any bread you have on hand.
- Leftover Dinner Rolls: A quick and easy choice, especially if you have some from your holiday meal. A light toast will bring them back to life.
- Rustic No-Knead Bread: Its perfectly crusty exterior and chewy interior make it ideal for soaking up every last drop of flavorful broth. The robust texture provides a delightful contrast to the tender soup ingredients.
- Irish Soda Bread: One of my personal favorites for pairing with soup. The dense, slightly tangy texture of Irish soda bread is truly incredible, especially when served warm with a generous smear of salted butter. It offers a unique flavor profile that complements the savory soup beautifully.
- Garlic Bread or Cheesy Toast: For an extra indulgent side, a slice of cheesy garlic bread adds a punch of flavor and a satisfying crunch.
Light and Fresh Salads
To balance the richness of the soup and create a complete, well-rounded meal, a vibrant salad is an excellent choice. It adds freshness, texture, and a touch of acidity.
- Roasted Butternut Squash Salad with Warm Cider Vinaigrette: This salad is not only delicious but also another fantastic way to utilize seasonal ingredients, possibly even leftover roasted squash from your holiday meal. The sweet and savory notes of the squash, combined with a zesty cider vinaigrette, cut through the richness of the soup marvelously.
- Simple Green Salad: A basic mixed green salad with a light lemon vinaigrette offers a refreshing counterpoint. Add some cherry tomatoes, cucumber slices, and perhaps a sprinkle of toasted nuts for extra texture.
- Coleslaw: A crisp, tangy coleslaw can also provide a refreshing crunch that works surprisingly well with a hearty soup.

Storing and Reheating Your Soup Like a Pro
One of the many charms of this Turkey Wild Rice Soup is its exceptional quality for storing and freezing, making it perfect for meal prep or enjoying a homemade meal on demand. The long-grain wild rice is key here, as it retains its shape and texture remarkably well when frozen, unlike other rice varieties that can become mushy.
- Storing in the Refrigerator: Once your soup has completely cooled down to room temperature, transfer it to an airtight container. It can be safely stored in the refrigerator for up to 4 days. Always ensure it’s fully cooled before refrigerating to prevent bacterial growth and to maintain freshness.
- Freezing for Longer Enjoyment: This soup is a freezer superstar! For long-term storage, pour the cooled soup into an airtight, freezer-safe container. It will keep beautifully for up to 6 months. Remember that liquids expand when frozen, so be sure to leave at least 1 to 2 inches of headspace at the top of your container to prevent cracking. For an extra layer of protection against freezer burn, you can also press a piece of plastic wrap directly onto the surface of the soup before sealing the lid. This minimizes air exposure and helps preserve flavor and texture.
- Thawing for Best Results: The ideal way to thaw frozen soup is gradually in the refrigerator. Transfer the frozen container to the fridge 1 to 2 days before you plan to eat it. This slow thawing process allows the flavors to meld beautifully once again and the soup to return to its optimal consistency. If you’re short on time, you can place the sealed container in a warm water bath until it thaws enough to be transferred to a saucepan for reheating.
- Reheating to Perfection: To reheat, simply pour the desired amount of soup into a saucepan. Place the saucepan over medium heat and allow the soup to come to a full boil, stirring occasionally. Once boiling, reduce the heat to medium-low and let it simmer for at least 5 minutes to ensure it’s heated through thoroughly. If the soup appears too thick for your liking after reheating, feel free to add a splash more turkey broth or water to achieve your preferred consistency. Taste and adjust seasonings if necessary before serving.
