  • 1 pound (453.59 g) white nectarines, about 4 medium, pitted and cut into ¼-inch slices
  • 1 pound (453.59 g) yellow nectarines, about 4 medium, pitted and cut into ¼-inch slices
  • ½ cup (100 g) superfine sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract
  • ½ cup (60 g) almond meal or oat flour

For the Egg Wash:

  • 1 egg, lightly beaten
  • Granulated sugar, for sprinkling
