  • ½ cup (100 g) granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • cup (113 g) of your favorite jam (raspberry or a superfruit spread recommended)

For the Festive Icing:

  • 1 cup (120 g) powdered sugar (confectioners’ sugar)
  • ¼ teaspoon pure vanilla extract
  • 1-2 Tablespoons milk (or water, for desired consistency)
  • Optional: Red or green food coloring, festive sprinkles

Instructions 

  • 1. Begin by preheating your oven to 350 degrees F (175 C). Prepare two baking sheets by lining them with parchment paper or silicone baking mats. This crucial step ensures your delicate cookies won’t stick and will bake evenly, allowing for easy removal. Set them aside while you prepare the dough.
  • 2. In a medium-sized bowl, thoroughly whisk together the all-purpose flour and baking powder. Whisking dry ingredients together ensures that the leavening agent is evenly distributed throughout the flour, contributing to a consistent texture in your finished cookies. Once thoroughly combined, set this dry mixture aside.
  • 3. In a large mixing bowl, using an electric mixer, cream together the softened unsalted butter and granulated sugar until the mixture becomes wonderfully light, pale, and fluffy. This process can take several minutes and is key to a tender cookie. Next, beat in the large egg and pure vanilla extract until they are fully incorporated, making sure to scrape down the sides of the bowl with a spatula to ensure everything is evenly mixed. Start with 1 tablespoon of milk, and gradually add more, a teaspoon at a time, until you achieve a smooth, pourable consistency that is thick enough to coat the back of a spoon but thin enough to spread easily over the cookies. For a festive touch, stir in a few drops of red or green food coloring at this stage. Spread this vibrant icing generously over the tops of the jam-filled cookies. For an extra flourish, sprinkle with festive sprinkles before the icing begins to set. Allow the cookies to sit undisturbed at room temperature until the icing is completely dry and firm to the touch, which may take an hour or two depending on humidity.
