Expert Tips for Perfect Salted Peanut Chew Bars

While this recipe is generally easy to follow, a few key tips will ensure your Salted Peanut Chews turn out absolutely perfect every time. The most crucial step involves the peanut topping. It’s vital to heat the mixture gently over low heat, stirring constantly. The goal is to melt the peanut butter chips and other ingredients until everything is just smooth and fully incorporated. Do not overcook the mixture! If it continues to heat past this point, it will begin to thicken and harden, much like caramel that has gone too far. This makes it challenging to spread evenly over the marshmallows, potentially resulting in a clumpy or stiff topping.

Once the topping mixture is smooth, remove it from the heat immediately, stir in the crisp rice cereal and salted peanuts, and then work swiftly to spoon and spread it over the marshmallow layer. Speed is your friend here to ensure an even coating before the mixture begins to set. Another helpful tip is to line your 9×13-inch baking pan with parchment paper, leaving an overhang on the sides. This will make it incredibly easy to lift the entire batch out of the pan once chilled, allowing for clean, precise cuts. Remember to exercise a little willpower during the chilling period – typically around 45 minutes – as this crucial step allows the bars to set properly, ensuring their delightful chewiness and making them much easier to slice. The wait is truly worth it for these totally delicious and addicting bars!

Ingredients

For the Base:

  • cups (187.5 g) all-purpose flour
  • cup (146.67 g) light brown sugar
  • ½ teaspoon (0.5 teaspoon) baking powder
  • ½ teaspoon (0.5 teaspoon) salt
  • ¼ teaspoon (0.25 teaspoon) baking soda
  • ½ cup (113.5 g) unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 2 egg yolks
  • 3 cups (225 g) miniature marshmallows

For the Topping:

  • cup (227.33 ml) light corn syrup
  • ¼ cup (56.75 g) unsalted butter
  • 2 teaspoons vanilla extract
  • 10 ounces (283.5 g) peanut butter chips , (1-2/3 cups)
  • 2 cups (37.33 g) crisp rice cereal
  • 2 cups (292 g) salted peanuts

Instructions

  1. 1. Preheat the oven to 350 degrees F. In a large bowl, beat all the base ingredients except the marshmallows with an electric mixer on low speed until crumbly. Press the mixture firmly into the bottom of an ungreased 9×13-inch pan.
  2. 2. Bake for 12 to 15 minutes or until light golden brown. Immediately sprinkle marshmallows evenly over the hot base. Return to the oven for 1 to 2 minutes longer or until the marshmallows just begin to puff and soften. Cool the base while preparing the topping.
  3. 3. In a 3-quart saucepan, combine all topping ingredients except the crisp rice cereal and peanuts. Heat over low heat, stirring constantly, until the peanut butter chips are fully melted and the mixture is smooth. Do not overcook. Remove the saucepan from the heat. Stir in the crisp rice cereal and salted peanuts until well coated. Immediately spoon the warm topping over the melted marshmallows, spreading quickly and evenly to cover the entire surface. Refrigerate until firm, about 45 minutes, to allow the bars to set completely. Once firm, cut into 36 individual bars. Store in an airtight container at room temperature.

Storage and Make-Ahead Tips

To keep your Salted Peanut Chews fresh and delicious, store them in an airtight container at room temperature for up to 3-4 days. If you prefer them chilled, they can also be stored in the refrigerator. For longer storage, these bars freeze beautifully! Wrap individual bars or the entire pan (once cut) tightly in plastic wrap, then place in a freezer-safe bag or container. They can be frozen for up to 2-3 months. Thaw at room temperature for a few hours before serving. Preparing them in advance makes them a perfect grab-and-go treat for any occasion.

Delicious Variations to Try

While the original Salted Peanut Chews recipe is absolute perfection, feel free to experiment with these delightful variations:

  • Chocolate Drizzle: Once the bars are chilled and cut, melt some semi-sweet or milk chocolate chips and drizzle artistically over the top for an extra layer of decadence.
  • Nutty Alternatives: Swap out half of the salted peanuts for pecans, cashews, or even a mix of your favorite chopped nuts for a different flavor profile.
  • Added Crunch: Incorporate crushed pretzels into the topping alongside the crisp rice cereal and peanuts for an even greater salty crunch and unique texture.
  • Butterscotch Boost: Replace a portion of the peanut butter chips with butterscotch chips to introduce a new depth of caramel-like flavor to the topping.
