  • 8 tablespoons unsalted butter, divided
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk (approx. 732 ml)
  • 8 ounces Gruyere cheese, shredded (about 2 cups), divided
  • 8 ounces sharp cheddar cheese, shredded (about 2 cups), divided
  • 16 ounces cavatappi pasta, or another shaped pasta of your choice
  • 1 cup plain breadcrumbs (approx. 108 g)

Instructions

  1. Preheat your oven to 400 degrees F (200°C). Prepare a 9×13-inch casserole dish by generously buttering it. Set a large pot of water on high heat to boil for the pasta; cover it to speed up heating.
  2. In a sturdy 12-inch cast iron skillet (or another heavy-bottomed, stainless steel skillet), cook the bacon over medium-high heat until it is beautifully crisp. Once cooked, transfer the bacon pieces to a plate lined with paper towels to drain excess fat. Carefully pour off all but 2 tablespoons of the rendered bacon grease from the skillet; reserve the rest if desired for other uses.
  3. Reduce the heat to medium-low. Add the finely diced butternut squash and onion to the remaining bacon grease in the skillet. Cook, stirring occasionally, until the squash and onion are tender, nicely browned, and slightly caramelized. Once cooked through, use the back of a wooden spoon or a fork to mash the mixture. It doesn’t need to be perfectly smooth; leaving some small chunks will add wonderful texture to the final dish.
  4. Add the pasta to the vigorously boiling water. Cook the pasta according to the package directions, aiming for an al dente texture. This usually means cooking it 1 to 2 minutes shorter than the recommended time, as it will continue to cook in the oven. When the pasta is ready, drain it thoroughly in a colander.
  5. While the pasta is cooking, prepare the rich cheese sauce. In a large saucepan, melt 4 tablespoons of the unsalted butter over medium heat. Once the butter has completely melted, whisk in the all-purpose flour. Continue whisking constantly for about 1 minute, until the flour begins to brown slightly and emits a nutty aroma. Gradually, in a slow and steady stream, whisk in the whole milk until the mixture is smooth and fully combined. Bring the sauce to a gentle simmer, stirring frequently to prevent sticking.
