  • 1 tablespoon granulated sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast, 2¼ teaspoons
  • 4½ cups (562.5 g) all-purpose flour
  • ¼ cup (56.75 g) unsalted butter, melted
  • Vegetable oil, for pan
  • 10 cups (2.5 l) water (for baking soda bath)
  • ⅔ cup (80 g) baking soda (for baking soda bath)
  • 2 tablespoons unsalted butter, melted (for brushing)
  • Kosher salt, for sprinkling

Instructions

  1. Combine the warm water, sugar, and 2 teaspoons of kosher salt in the bowl of a stand mixer. Sprinkle the active dry yeast over the mixture. Allow it to sit undisturbed for 5 minutes, or until the mixture becomes visibly foamy, indicating the yeast is active.
  2. Add the all-purpose flour and ¼ cup of melted unsalted butter to the mixer bowl. Using the dough hook attachment, mix on low speed until all ingredients are well combined and a shaggy dough forms. Increase the speed to medium and continue to knead until the dough becomes smooth, elastic, and pulls away cleanly from the sides of the bowl, approximately 4 to 5 minutes. Remove the dough from the bowl and transfer it to a separate, clean bowl that has been lightly oiled. Take one piece of dough and roll it out into a long, thin rope, approximately 24 inches (60 cm) in length. Starting at one end of a hot dog, carefully wrap the dough rope around it in a spiral, ensuring even coverage. Pinch the ends of the dough together firmly to seal it securely around the hot dog. Place the wrapped pretzel dog onto one of your parchment-lined baking sheets. Repeat this process with the remaining dough pieces and hot dogs until all are wrapped.
  6. Carefully place two pretzel dogs at a time into the boiling baking soda water. Boil each pair for exactly 30 seconds, turning once if needed to ensure even exposure.
