Ingredients

  • 1 cup (236.59 ml) half-and-half
  • ¾ cup (150 g) granulated sugar
  • Pinch of salt
  • 2 cups (476 ml) heavy cream
  • ¼ teaspoon (0.25 teaspoon) vanilla extract
  • cup (83.33 g) malt powder
  • 6 egg yolks
  • 2 cups (200 g) malted milk balls, Whoppers, coarsely chopped

Instructions 

  • 1. Begin by warming the half-and-half, granulated sugar, and a pinch of salt in a medium saucepan over medium heat, stirring occasionally until the sugar dissolves and the mixture is warm but not boiling. In a large bowl, whisk together the heavy cream, vanilla extract, and malt powder until well combined. Set a fine-mesh strainer over this bowl.
  • 2. In a separate medium bowl, vigorously whisk the egg yolks until they are light yellow and slightly thickened. Slowly ladle about half of the warm half-and-half mixture into the whisked egg yolks, whisking constantly to temper the eggs and prevent them from scrambling. Once tempered, carefully scrape the warmed egg yolk mixture back into the saucepan with the remaining half-and-half.
  • 3. Continue to stir the mixture constantly over medium heat with a heatproof spatula, making sure to scrape the bottom of the saucepan as you stir. Cook until the mixture thickens enough to coat the back of the spatula, typically reaching a temperature of 170-175°F (77-79°C). Immediately remove from heat and pour the custard through the mesh strainer into the bowl containing the malted cream mixture. Whisk everything together until thoroughly combined. To cool the mixture quickly, place the bowl over an ice bath and stir occasionally until it reaches room temperature.
  • 4. Cover the custard and chill it thoroughly in the refrigerator for at least 4 hours, or preferably overnight, to ensure it is very cold. Once fully chilled, freeze the mixture in your ice cream maker according to the manufacturer’s instructions until it reaches the consistency of soft-serve ice cream. As you remove the ice cream from the machine, gently fold in the coarsely chopped malted milk balls (Whoppers) until evenly distributed. Transfer the ice cream to an airtight container and freeze for another 2-4 hours, or until firm enough to scoop.
