Ingredients

For the Shrimp

  • 1 tablespoon unsalted butter
  • 1 pound (453.59 g) shrimp, peeled, deveined and chopped into ½-inch pieces
  • ½ teaspoon (0.5 teaspoon) Cajun seasoning

For the Macaroni and Cheese

  • 1 pound (453.59 g) cavatappi pasta, or shaped pasta of your choice
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups (732 ml) whole milk
  • 9 ounces (255.15 g) Pepper Jack cheese, shredded (about 2¼ cups)
  • 6 ounces (170.1 g) sharp cheddar cheese, shredded (about 1½ cups)
  • ½ teaspoon (0.5 teaspoon) Cajun seasoning, divided
  • Salt and fresh ground pepper, to taste

For the Topping

  • 4 tablespoons unsalted butter, melted
  • 1 cup (60 g) Panko bread crumbs
  • 3 ounces (85.05 g) Pepper Jack cheese, shredded (about ¾ cup)
  • 2 ounces (56.7 g) sharp cheddar cheese, shredded (about ½ cup)

Instructions

  • Preheat oven to 400 degrees F (200°C). Lightly butter a 9×13-inch casserole dish. Begin heating a large pot of water over high heat for the pasta; cover to bring to a boil faster.
  • Prepare the Shrimp: In a 10-inch skillet, melt 1 tablespoon of unsalted butter over medium heat. Add the chopped shrimp and ½ teaspoon of Cajun seasoning. Cook, stirring occasionally, until all shrimp turn pink and are fully cooked through, typically 3-5 minutes depending on size. Remove the pan from the heat and set the cooked shrimp aside.
  • Prepare the Macaroni and Cheese: Once the water is boiling, add the cavatappi pasta. Cook the pasta according to the package directions for al dente. If your package doesn’t specify al dente, cook it for 1 to 2 minutes less than the recommended cooking time; the pasta should still have a slight bite as it will finish cooking in the oven. When the pasta is ready, drain it thoroughly in a colander.
  • While the pasta cooks, start making the cheese sauce. In a large, heavy-bottomed saucepan, melt 4 tablespoons of unsalted butter over medium heat. Once the butter has melted and begins to foam, whisk in the 4 tablespoons of all-purpose flour. Continue to whisk constantly for about 1 minute, until the flour paste (roux) starts to turn a light golden color and emits a nutty aroma. Gradually, in a slow, steady stream, whisk in the 3 cups of whole milk until smooth. Bring the sauce to a gentle simmer, stirring occasionally, and allow it to thicken slightly.
  • As the sauce simmers and thickens, remove it from the heat. Begin stirring in the shredded Pepper Jack and sharp cheddar cheeses, adding a handful at a time. Stir continuously with a wooden spoon after each addition until the cheese is completely melted and incorporated into a smooth, creamy sauce before adding the next batch. Season the cheese sauce with the remaining ½ teaspoon of Cajun seasoning, and add salt and fresh ground pepper to taste. Turn off the heat once all the cheese is melted and the sauce is perfectly seasoned.
  • Add the cooked, drained pasta and the prepared Cajun shrimp to the creamy cheese sauce. Stir gently with a wooden spoon, ensuring everything is completely combined and the shrimp and pasta are evenly distributed throughout the rich sauce. Carefully pour this flavorful mixture into the prepared 9×13-inch casserole dish, spreading it out evenly.
  • Prepare the Topping: In a small bowl, combine the 4 tablespoons of melted unsalted butter with 1 cup of Panko bread crumbs. Toss with a fork until the Panko is evenly moistened and coated with the butter.
  • Sprinkle the remaining shredded Pepper Jack and sharp cheddar cheeses evenly over the top of the macaroni and cheese mixture in the casserole dish. Then, evenly distribute the buttered Panko bread crumb mixture over the layer of cheese.
  • Bake in the preheated oven for approximately 15 to 20 minutes, or until the topping is golden brown and the cheese sauce is bubbly around the edges. Once baked, allow the casserole to rest for about 10 minutes before serving. This resting period allows the sauce to set slightly, making for easier and cleaner serving.

Notes

  • When purchasing shrimp, if you find super small shrimp on sale, there’s no need to chop them; they can be cooked and added whole.
