Peanut Butter & Marshmallow Popcorn Bars

These Peanut Butter & Marshmallow Popcorn Bars put a fabulous peanut butter and popcorn spin on traditional crispy rice treats!
Do you love crispy rice treats?
If you do, you are going to LOVE this peanut butter and marshmallow riff on them. There’s nothing better than an ooey, soft-centered sweet treat, and if you’re a popcorn fanatic this is going to be right up your alley. It goes without saying that we'll pretty much put peanut butter in any recipe, and it is memorable with the marshmallows and popcorn. We threw in some chocolate chips for good measure and because, well, chocolate chips are rarely a bad decision!
We had the opportunity to give the new Peter Pan peanut butter, Simply Ground, a test spin and for a serious peanut butter lover like myself, this stuff was absolute heaven! This is fresh ground peanut butter with a little bit of consistency left, so it’s creamy but has just a bit of crunch, which is totally a standby of both worlds. We may have eaten half of the honey roasted jar straight up with a spoon. No apologies.
Since we had the opportunity to be a little adventurous with a new peanut butter, we wanted to throw together a fun and straightforward recipe that would be reliable for after school snacks, camping trips and backyard swim parties. Mission accomplished!
We popped our own popcorn for this recipe, but you could totally buy a bag of plain popcorn at the grocery store, or use microwave popcorn all the same. We would just stay away from overly buttered popcorn, as we don’t think the flavors would play nicely with these bars.
If you’re looking for A straightforward and fun recipe that serves a crowd and satisfies a sweet tooth, whip up these peanut butter and marshmallow popcorn bars ASAP. We think these would also be great formed into balls for gifts at the holidays!
